Steve's Veggie Chilli

Ingredients
3 Medium punnets of Mushrooms (1 of Field, 1 of Chestnut, 1 of Shitake)
1 Tin kidney beans
1 Tin chopped tomatoes
2 Chilli peppers (green)
1 Large onion
2 Medium cloves of garlic
Chilli Powder
Boiled Rice (portions as required)

Method
(1) Chop the mushrooms as fine or as rustic as you wish (Roughly chopped gives it a meat texture).

(2) Go about making a Chilli as you would normally .....

  1. Roughly chop 1 large onion and finely dice 2 green chilli peppers.
  2. Add kidney beans and chopped tomatos.
  3. Add 2 medium cloves of garlic, or as you prefer.
  4. Mix with enough chilli powder for that distinctive red look, remembering that 2 peppers are already in there.

(3) Everyone has their own way of making a chilli, so the only thing to mention here is to add the mushrooms last, because .....

  1. They absorb like sponges and will take the juices away.
  2. Mushrooms quickly cook to nothing.

(4) Serve with a good rice and a slice of hot Garlic Bread. If you like a HOT CHILLI just don't de-seed the peppers.

This recipe will usually serve 2 good adult portions and 1 child's portion. Strict vegetarians should check the tinned ingredients for meat by-products.
